The usual price for half a camphor tea smoked duck is $28, while the usual price for a whole camphor tea smoked duck is $56. It is marinated for 4 hours with quality red tea leaves, Szechuan peppercorn, anise seed, cinnamon and cumin seed. After marination, it is air dried for 6-8 hours to tenderise the meat naturally before steaming. It is then smoked in camphor wood charcoal with orange peel. The most well-known pork dish in Chinese cuisine. It is named after its creator, Su Tung-po, a great literary of the Song Dynasty. The pork belly is first cleaned, boiled, quickly cooled in icy water and finally marinated in wine, spices and quality soy sauce. It is dried for 4 hours. Then, it is deep fried until the skin blisters and stewed with pickled cabbage until tender and the gravy reduced to a thick constituency.
